{"id":2013,"date":"2015-11-29T11:05:46","date_gmt":"2015-11-29T11:05:46","guid":{"rendered":"https:\/\/elcotarro.com\/?p=2013"},"modified":"2015-11-29T10:33:05","modified_gmt":"2015-11-29T10:33:05","slug":"aciertos-y-errores-de-la-roja","status":"publish","type":"post","link":"https:\/\/elcotarro.com\/?p=2013","title":{"rendered":"ACIERTOS Y ERRORES DE \u201cLA ROJA\u201d"},"content":{"rendered":"<p>\u2666 Tengo que afirmar que la llamada \u201cGu\u00eda Roja\u201d acierta de pleno a la hora de otorgar su primera estrella al chef <strong>Juan Carlos Padr\u00f3n<\/strong> y su hermano <strong>Jonathan<\/strong>, tambi\u00e9n chef y pastelero, aunque, todo sea dicho, gran parte de ese \u201cestrellato\u201d tiene que ver con sus respectivas esposas y compa\u00f1eras, <strong>Mar\u00eda Jos\u00e9<\/strong> y <strong>Raquel<\/strong>, as\u00ed como la matriarca de la familia, do\u00f1a <strong>Peregrina Le\u00f3n<\/strong>, que es otra estrella en \u201cEl Rinc\u00f3n de Juan Carlos\u201d. Pero de igual modo, creo que (y perm\u00edtanme reflejarlo aqu\u00ed) la gu\u00eda gastron\u00f3mica m\u00e1s famosa y exigente (y tambi\u00e9n muchas veces pol\u00e9mica y hasta injusta) del mundo, se equivoca al no darle su primera estrella al restaurante \u201cLas Aguas\u201d del Gran Hotel Bah\u00eda del Duque, en Costa Adeje, liderado por el chef <strong>Braulio Simancas<\/strong> al frente de un gran equipo de cocina y sala. Sin duda, la apuesta del empresario tinerfe\u00f1o <strong>Francisco Javier Zamorano<\/strong>, presidente del Grupo CIO, propietario del hotel que actualmente dirige <strong>Saad Azzam<\/strong> ha sido clara desde el primer momento en que apost\u00f3 por el bueno de <strong>Braulio Simancas<\/strong> para que \u201cLas Aguas\u201d sea el mejor restaurante de cocina creativa canaria de nuestro archipi\u00e9lago.
