{"id":2086,"date":"2015-12-20T11:03:09","date_gmt":"2015-12-20T11:03:09","guid":{"rendered":"https:\/\/elcotarro.com\/?p=2086"},"modified":"2015-12-20T08:26:10","modified_gmt":"2015-12-20T08:26:10","slug":"injusta-ruindad-gastronomica","status":"publish","type":"post","link":"https:\/\/elcotarro.com\/?p=2086","title":{"rendered":"INJUSTA RUINDAD GASTRON\u00d3MICA"},"content":{"rendered":"<p>\u2666\u00a0 Mi querido y recordado amigo <strong>Manuel Iglesias Garc\u00eda<\/strong>, uno de los mejores periodistas gastron\u00f3micos que ha dado Tenerife y Canarias, me ense\u00f1\u00f3 que los que nos dedicamos por profesi\u00f3n a dicho sector, y que tenemos el privilegio de contar con una p\u00e1gina de peri\u00f3dico o un micr\u00f3fono de radio a nuestra disposici\u00f3n, ten\u00edamos que ser muy responsables y cuidadosos, a la hora de publicar la cr\u00edtica de un establecimiento. Otro gran amigo y maestro, el periodista <strong>Jos\u00e9 Carlos Capel<\/strong>, presidente de MadridFusi\u00f3n y cr\u00edtico gastron\u00f3mico del peri\u00f3dico <em>El Pa\u00eds<\/em> (uno de los m\u00e1s rigurosos, por cierto), me ha ense\u00f1ado que, para ser responsable y valorado, la cr\u00edtica gastron\u00f3mica debe ir firmada por su autor y no vale (ni debe valer) esconderse tras un seud\u00f3nimo, como est\u00e1 haciendo alguno por estos andurriales. No podemos, no debemos, es injusto jugar con el plato de comida (nunca mejor dicho) de muchas familias de profesionales, por culpa de una cr\u00edtica desmedida que, encima, no va firmada con el nombre y apellidos (reales) de su autor. Y menos en un territorio peque\u00f1o, como es el caso de nuestras islas. Yo siguiendo los principios de <strong>Manuel Iglesias<\/strong>, o hago una cr\u00edtica en positivo se\u00f1alando, en todo caso, los aspectos a mejorar o, simplemente, me callo.
